Here's the recipe:

Sourdough Brownies

Ingredients:

  • 4 oz (113g) unsweetened chocolate (for melting)
  • 1/2 cup (113g) butter
  • 1 cup (240g) sourdough starter
  • 3/4 cup (150g) sugar
  • 2 large eggs
  • 1 teaspoon (5g) vanilla extract
  • 1/2 cup (60g) flour
  • 1/4 cup (25g) cocoa powder
  • 1/4 teaspoon (2g) salt
  • 1 cup optional Mix-ins: chopped nuts, chocolate chips, dried fruit, etc.

Instructions:

  1. Preheat Oven and Prepare Pan: Set your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper or grease it.
  2. Melt Chocolate and Butter: Melt the unsweetened chocolate and butter together over low heat in a pan or in the microwave, stirring until smooth. Set aside to cool slightly.
  3. Combine Wet Ingredients: In a mixing bowl, whisk together the sourdough discard, sugar, eggs and vanilla extract. Slowly whisk the slightly cooled chocolate and butter mixture into the wet ingredients. Stir until well combined.
  4. Combine Dry Ingredients: Sift together the flour, cocoa powder and salt. Gently fold this into the wet mixture until just combined. Avoid over mixing. If using any mix-ins like nuts or chocolate chips, fold them in now.
  5. Bake Cool and Serve: Pour the batter into the pan and smooth the top. Bake for 30-35 minutes until edges slightly pull away and the center is set but not jiggly. Cool in the pan, then transfer to a cutting board, cut into squares and serve.
